I say to-MAY-to you say to -MAH-to. It’s summer and there are tomatoes everywhere! Yum! But eating just plain tomatoes everyday can get boring, so we looked to find a creative new way to make a summer fresh tasty treat!
And what would be better than this?

Peanut Butter. The childhood favorite. An easy, delicious spread that is always ready for a quick pb&j on the go. And while we may all love a good peanut butter and jelly sandwich – there are actually many other yummy ways to eat it – so we thought we would share this awesome article from the Food Network on 10 way to love peanut butter!
Peanut butter is just so good on it’s own. A light smear on celery sticks, apple slices, or whole grain crackers and you have a heart-healthy and satisfying snack. Sprinkle on some sunflower seeds for crunch or a few raisins for natural sweetness. Each tablespoon has about 110 calories so portion out to keep the calories reasonable. Did you hear that June is National Iced Tea Month? Does anything sound more refreshing??? We loved iced tea – sun tea brewed on your windowsill or back porch, fresh Iced Tea from your local farm, and all the other many varieties we carry in the store. Lemon, black, green, raspberry – the list goes on and on and on with delicious flavors and concoctions – but until now, we have never heard of Rhubarb Iced Tea!
And what a better way to enjoy this seasonal fruit (or is it a vegetable?) than as a flavored iced tea? We’re thinking strawberry rhubarb pie as a drink. YUMMMMM.
Here’s the recipe we came across –
Rhubarb Iced Tea
Adapted from Martha Stewart, serves 4 (or 1 very thirsty, stressed out person)
6 stalks rhubarb, cut into 3-inch lengths
6 cups water
Agave, to taste (I like my iced teas only slightly sweetened, so I didn’t add much)
1. Bring the rhubarb and water to boil in a large saucepan, then simmer for an hour.
2. Strain the liquid, add agave to taste (I like mine just barely sweetened), and chill.
